Up to 15 teams (composed of Culinary Students) will compete against each other for the opportunity to represent their College.  Each team member must be registered with the ACF in order to enter the competition. Each team will be tested in the following: Practical and Contemporary Cooking-Skill, Skills Salon (local, state, & regional) and Cooking Phase (local, state, & regional).


Creekstone Farms and Florida Beef Council Beef Signature Recipe Competition

Friday, September 9th

Up to 15 chefs (ACF & Non-ACF) will have 1 hour and 50 minutes to create four portions of a signature entree recipe utilizing fresh beef. 


Taste of Elegance Pork Signature Recipe Competition

Saturday, September 10th

This competition is open to all chefs (ACF & Non-ACF) and is designed to encourage up to 20 chefs to creatively prepare and feature fresh pork on their restaurant, non-commercial foodservice or catering menu. Each participating chef will develop a main entree recipe utilizing whole muscle pork.

Beginning on Thursday, September 8th and ending on Saturday, September 10th, 12 teams will compete against each other (4 teams each day) in the USA Culinary Cup Team Competition. Each team will have up to 5 hours to prepare a four course meal, while following strict guidelines. Competition will take place on all show days.

You're invited to sit, relax and enjoy a four course meal…without leaving the tradeshow floor! At 12:30 pm each day, the teams competing in the USA Culinary Cup Team Competition will serve their signature dishes to a "restaurant style" dining room at the back of the tradeshow floor. Tickets must be purchased in advance on the registration page of this website. Tickets are available to both attendees and exhibitors and are sold on a first come, first served basis.

It's time to showcase your talents, Chefs! This competition is compromised of two categories: student pastry chefs & professional pastry chefs. The goal for the students is to reinforce the basic execution of fundamentals (not to force them to display advanced creativity during a period when learning and practicing basic skills are necessary). The second category is open to all Pastry Chefs, they must create their centerpiece based on this year's theme "IMAGINATION".  They are allowed two mediums: Sugar or Chocolate. All chefs must have their centerpieces set up by 8:00 am Thursday, September 8th, 2011.
