Stephen Lyman loves all things shochu. In New York, he is one of just 2 certified shochu advisers who work on the service side of the beverage industry, consulting with a number of bars and restaurants around the US and guest baratending nearly weekly in whatever city he happens to be in at the time. In Japan, he is co-owner of a shochu bar in Kumamoto and is an apprentice at a traditional hand made shochu distillery in Kagoshima every autumn. Stephen is an Associate Professor of Health Policy at Weill Cornell Medical College in his spare time.
