Tom Santos is a leading dough teacher and solution-seeker, working with National Flour Technical Sales and operators throughout the United States and Puerto Rico on dough questions. An original General Mills Doughminator™, Tom has 43 years of dough experience beginning in 1980. He owned and operated a full line retail bakery for 18 years before transitioning to General Mills, where he recently celebrated his 25-year anniversary. Over his 4 decades of working with dough, Tom has seen countless types of dough and dough making techniques, as well as developed a deep understanding of the wheat market and the impact of market direction on flour pricing. Tom’s background of product knowledge, production, operations, and training offers an excellent foundation to assist Pizza customers.
